Should You Refrigerate Eggs in Nigeria? What You Need to Know
There is a common statement people make: “Never put eggs in the refrigerator.” But is that really true in Nigeria? The answer is more balanced than many think.
In Nigeria, most eggs sold in markets and shops are not industrially washed. Unlike in countries such as the United States, where eggs are cleaned with water and chemicals before sale, Nigerian eggs usually retain their natural protective coating. This thin layer, often called the cuticle, helps block bacteria from entering the shell. Because of this natural protection, eggs in Nigeria can safely be stored at room temperature. Many households keep them in baskets, trays or cupboards without any problem. However, this does not mean refrigeration is wrong.
Nigeria has a hot climate. In many parts of the country, temperatures can rise significantly during the day. Heat speeds up spoilage. When eggs are exposed to high temperatures for long periods, they can deteriorate faster and lose freshness. In such conditions, refrigeration can actually help preserve quality and extend shelf life.
The key issue is not whether refrigeration is good or bad. The key issue is consistency. If you buy eggs that have been stored at room temperature, you can continue storing them that way, provided they are kept in a cool, dry and well-ventilated place. Keep them away from direct sunlight, stoves and other heat sources. Do not wash them before storage, because washing removes the natural protective coating. If you decide to refrigerate your eggs, keep them refrigerated. Avoid moving them repeatedly between cold and warm environments. Temperature changes can cause condensation on the shell, and moisture can increase the risk of bacteria growth.
In practical terms, if you plan to use your eggs within a few days and your kitchen is not excessively hot, room temperature storage is acceptable. But if you buy eggs in large quantities or want them to last longer, refrigeration is a safer option, especially during hot seasons. So the better advice for Nigerians is not “never refrigerate eggs.” Instead, it is this: store eggs properly, protect them from heat, and be consistent with your storage method.
Good food safety is not about rigid rules. It is about understanding your environment and making wise decisions.
